During the week of 20th June our National Diploma in Hospitality Management students had the opportunity to see what working is like at the Sofitel Auckland Viaduct Harbour. They each did two shifts, one morning and one evening at Lava Dining.
Before our students started they received a training session from Roxane, Sofitel's Training Manager. They learnt about the Sofitel brand and their strict presentation and attitude guidelines all awhile being treated to a magnificent morning tea (including the most delicious french pastries) in their newly opened Wine Cellar.
The following week our students started their work experience. The breakfast shift was an early start for some, 7am, but they got to see first hand what running a breakfast buffet for an 170 room hotel is like. They were guided by the friendly Food and Beverage team. The evening shift started at 6pm. Students were able to assist during dinner service and even got to deliver some room service orders. They met Executive Chef Sebastian Hinrichs who was previously the Head Chef for the French Cafe and creates some of the most amazing dishes.
All in all this has been a fantastic experience for our students and we like to thank the team at Sofitel Viaduct Harbour for the amazing opportunity.

The New Zealand Culinary Fare found a new home in the Vodafone Events Centre in Auckland, which boasts a grand arena and extensive amphitheatre seating to host both spectators and supporters. This annual event is the perfect place to test both professional and training Food and Beverage entrants to the highest standard, providing a platform for contestants to show off their knowledge and skills to discerning judges, and allowing only the very best to come out on top.
After achieving well in the Regionals, Crown Institute Food & Beverage students Chloe Hartwell and Woody Sim were joined by their classmates Amy Partridge, Matthew Bouzaid and Siaosi Finau to compete in the Front of House Cocktail Class.
The competition for this class was based around classic cocktail making, and contestants were required to produce and serve 4 glasses of classic cocktails, consisting of two Mojitos and either two Daiquiri or two Mai Tai. Following this, each competitor was asked a cocktail related question.
Out of the 50 or so contestants in the Classic Cocktail competition, Crown Institute students made up around 10% of the competitors, and every single one of our students received a bronze medal placing. Siaosi Finau was even told that he had made the best tasting cocktails in the whole Classic Cocktail class, something both he and his tutor Troy were very pleased about!
The professionalism and skill of Crown Institute’s students really shone through at this year’s New Zealand Culinary Fare, and we wish to congratulate of them for all their hard work and showing that bronze really is the new black!

Graduation is always one of the most anticipated events for students. At Crown Institute, our May 2014 graduation was no exception.
Graduates and their guests gathered at the exclusive Kingston Room at Rydges Auckland Hotel for an afternoon of inspiration and celebration.
We were privileged to have Emmily Campbell from Smaller Earth as our guest speaker. Emmily trained in the Hospitality industry and travelled the world gaining amazing work experience. Her journey and determination inspired students and reminded them to set goals and always give their best.
We would like to thank Taste New Zealand and Rydges Auckland Hotel for sponsoring the fantastic prizes for the top students.
